Training for Students and Chefs
Professionals in the restaurant industry play a crucial role in the sustainability of the food system by selecting ingredients from local producers with sustainable practices, creating seasonal menus, and setting new gastronomic trends. The GrowLIFE team will introduce new educational content to be taught in the Technological Specialisation Courses at the 12 Tourism and Hospitality Schools of Turismo de Portugal. This initiative aims to raise awareness and equip students – the future professionals of the restaurant industry – with the knowledge and skills needed to contribute to the transition towards a healthier and more sustainable food system. The courses include Restaurant and Beverage Management, Kitchen Management and Production, and Pastry Management and Production.
The practical content of these training courses for students and restaurant professionals will also include:
– Visits to sustainable agricultural productions to learn about their farming and distribution practices, with hands-on tasks such as sowing, tending, and harvesting.
– Planning with farmers to identify a range of local and seasonal products that can be used to create sustainable recipes
This competency unit, developed for the Technological Specialisation Courses at the 12 Tourism and Hospitality Schools of Turismo de Portugal, will be available in the catalogue of the National Agency for Qualification and Professional Education (ANQEP). Courses for professionals will be available in the Portuguese Executive Training Catalogue.
